Day 1499: Trout

Did an Aldi shop and it unexpectedly rained and thundered! Luckily I didn’t need too much; we already had a lot of vegetables. I did get two of the girls new beds.

I got a take and bake pizza for our lunch and then for dinner I made steelhead trout and the leftover risotto. I made double trout and made some trout salad for tomorrow’s lunch.

I finished my succulent crochet kit! It came out super cute if slightly large because I don’t know how to count.

We ordered a new grill and it’s supposed to be delivered tomorrow but it hasn’t shipped so we will see! We have a class Saturday and won’t be home so it better be here before then! It’s stressing us out! They had said it would be store delivery but now they said it would be UPS or FedEx and it’s heavy and expensive so obviously we have to be here when it arrives!

Day 1488: Take out

We did not make it to the museum! The wind was too much. We ended up getting sushi for lunch.

The plan for dinner was ham, mashed potatoes and spinach but we made the potatoes and spinach and went to heat up the ham and it was spoiled. Since we are near grocery zero we didn’t have a lot options so we pivoted and got some Chinese food. Which we did not feel like but at least it wasn’t frozen!

So we sort of meal prepped because I think I will turn the potatoes and spinach into a pie.

Day 1475: Tacos

Today was another 7 hr weaving class. I could not find any thing to bring to lunch so I had some goldfish crackers and M&Ms I had brought in case of emergency.

I drove home after and Matt had gone to Costco and got the chicken taco kit. Costco also had castella cake which I love and he got a box. It wasn’t as good as fresh from the bakery but not bad!

He also made berry compote while I was away (we had some with the cake) and prepped food for our anniversary tomorrow.

Long day but the class was successful! I have this kind of specialty loom already so I’m looking forward to practicing more at home. I had tried a little after we impulse bought it but now I know exactly how to warp it and weave so I don’t imprint any bad habits on myself.

I think if the class was slightly further away and our anniversary wasn’t tomorrow, I would have stayed tonight in the hotel. It was a long two days! The crochet lesson on Friday seems like it happened a decade ago.

People were coughing every where but no masking! I masked in class and in common areas of the hotel of course but it was really an area where people stopped doing anything. Meanwhile here at home, I see people masking all the time and there are stores and events that require it.

I think the dinners were the most successful of any of the trips I’ve been to for weaving/spinning classes. Tasty, convenient and affordable. Lunch continues to be a problem; I really wish they would add a boxed lunch option to these things but they never do. Or provide any refrigeration. The gap of time between lunch and leaving the hotel is too long for something not to be refrigerated and the rooms don’t always have freezers for ice packs.

I thought the muffin was a good idea but it was so bad and I couldn’t find a bakery or store that was still open after class on Saturday or open on Sunday morning. The classes are pretty physically demanding and I bet even locals would be happy not to have to pack a lunch.

Day 1467: Steak

We picked up a sushi special for lunch then went to the park for a bit. Why do so few parks have bathrooms? How can you have pavilions and baseball diamonds and no bathrooms?

For dinner Matt made steak with gnocchi sautéed with spinach and garlic. Very tasty!

We made some rice for tomorrow’s dinner and finished watching The Woman in the Wall. It wasn’t bad but could have been better!

Day 1439: Sushi

We did wake up to snow today but not nearly as much as predicted.

For lunch we had eggs scrambled with prosciutto and capicola and toast.

Matt put up the pot roast but it took many more hours to get tender than expected so we ended up getting sushi and seaweed salad at this sushi/hibachi place not that far from our house. We had tried it years ago and didn’t love it but it was pretty good! Less rice than some of the other places which I like and basic rolls were under $7.

So we have pot roast for two more dinners ready to do which is nice. I feel like this is a never ended saga with the roast. We kept putting off making it for like two weeks and now it took like 2 extra hours to cook.

We watched some Drops of God and knitted, as you do.

Day 1410: Snow Day (again)

We were expecting snow but we really got a lot! Another 7 inches or so. It was coming down all day, way into the evening.

I made the most amazing lemon poppyseed muffins today. I had two for lunch and nothing else. Matt had a muffin and some (canned) soup. Truly the best lemon poppyseed muffins I’ve ever had.

For dinner Matt made a tomato-pancetta sauce and we had it with refrigerated spinach tortellini. We are doing pretty good food-wise. I still have a pork loin and some ground lamb in the fridge. It feels like it’s been longer than a little over a week since I shopped. Making every single meal will do that!

Matt made some rice tonight to prep for garlic fried rice tomorrow. I had bought some frozen tocino and longanisa at H Mart a while back so we are going to have some sort of -silog tomorrow.

Day 1407: Potatoes

Lots of snow today! We got more overnight and the low today is supposed to be like 12°.

I did some community cookbook work and Matt worked from home and shoveled us and our neighbor out. The roads are still really bad.

For lunch I had ugly leftover pasta because I didn’t finish my dinner the other night.

Matt had finished his so he heated up leftover sauce and made fresh pasta.

For dinner I made these herby bratwurst from Aldi with roasted potatoes and cauliflower. I also prepped salmon, spinach and mushrooms for tomorrow’s main meal. We have a lot of potatoes and cauliflower leftover; I didn’t realize how big it was until I was cutting it up! I probably would have made something else with it.

More French tv and knitting. I finished the body of the bear and now it’s on to the arms.
