Day 1799: Tacos

We had Baltimore classic sausage and hominy for lunch. Mannings apparently has switched to small cans which I don’t love but it’s all I can find.

Matt went Costco while I chilled with the dogs and made a couple buttons so I don’t get behind.

For dinner we had Costco tacos.

Matt made meatballs for tomorrow when he has to go into work and has a piano lesson.

Day 1779: Cookies!

Shoveled out today. Not as much snow as they predicted but it’s super cold and icy. I guess it’s global warming but our winters have been so much colder on average and for longer. I don’t like it!

We had the leftover bagels for lunch.

For dinner we made the leftover pork chops and zucchini into quesadillas, added refried beans and spinach.

Then we baked cookies—brown butter chocolate chip. They came out good! We cooled the butter wrapped up in the yard on our table in the snow.

We had some cod with a close date so sautéed that up for tomorrow’s dinner so it doesn’t go bad.

Day 1737: Lasagna

We cut the turkey in half and it was still icy this morning! We roasted it anyway and made sandwiches with it for lunch.

For dinner Matt got the spaghetti special and and I got lasagna and we split the salad.

I did some button prep and wound yarn that finally arrived. I had ordered it back before Matt’s surgery as something to do then and it took a month to arrive. It was a holiday themed kit so that was surprising. It was also a poorly done skein and I had to detangle it inch by inch vs using my swift. It was way too expensive for that!

Day 1731: Tacos

I ran to the other house to defrost the turkey for this weekend. Somehow I always have so much to drop off!

We had some ground chicken and a pork loin there so I brought that back. Matt made the chicken into meatballs for a meal later this week because it was sell by today.

I came home and had some canned soup and Chex Mix. I was going to make some but Matt got some at Costco. It’s not bad! Matt had leftover chicken and rice.

For dinner we had Costco chicken tacos. I think they could use spice but are the most solid of their meal options.

Hard boiled some eggs. Maybe I will make deviled eggs? I wanted the carton so they had to go!

Day 1725: Turkey Shepherds Pie

I drove out to pick up the Thanksgiving cupcakes I ordered. It took forever! I didn’t feel like it was that much traffic but driving to that area takes like 15 minutes longer than it used to.

We were going to have soup for lunch but Matt had got some from the meal prep place for his lunch and it was super salty. He ended up getting up some Thanksgiving sandwiches from the pit beef place. They were good but missing the cranberries again. We added lingonberries.

For dinner we had a weird “shepherds pie” from the meal prep place that was ground turkey topped with mashed potatoes and stuffing. I don’t think we’d get that again, it was oddly greasy. I think we expected it to be regular turkey not ground? It was kind of a sloppy mess.

We had apple pie cupcakes for dessert because they had whipped cream icing and apple compote and didn’t think they’d hold up until tomorrow.

Matt prepped the meal for tomorrow after picking up some ingredients at the store. Hopefully tomorrow will go smoothly! It’s just us but it would be nice to have a good meal.

Day 1596: Trout

I did a little Lidl shop today. We didn’t even have eggs! I don’t know what we are doing for the weekend so I tried to get enough groceries to get us through Thursday at least.

Matt got us big muffins yesterday at the bread bakery. They were ok but mine (pineapple coconut) was a little bland. At least we tried them and know for next time! We also had some soup.

For dinner I made steelhead trout with tomatoes and capers and roasted potatoes and radishes but the radishes didn’t get soft enough. I don’t know why! The potatoes were perfect. We had a lot of potatoes left so I heated up the radishes more in a skillet so next time we can just heat them both up together for a side. It was good to use up the tomatoes from the BLTs over the weekend, they were starting to look sad.

We made smoked salmon egg salad for tomorrow’s lunch.

Day 1580: Fried Chicken

My dad’s dog is officially back with her new owners and Matt is back from dog sitting! It was a long two weeks.

We had tuna sandwiches for lunch then got fried chicken, cucumber salad and potato from the grocery store that has good hot food. We made some salmon for dinner tomorrow. We also tried a broccoli salad that tasted like a dumpster on the beach in August

The store sold individual slices of Smith Island cake so we split one. It was cookies and cream flavored!

We watched the fireworks over the river.

It was quite a site! A family put them out on a floating platform.
