Day 1777: Eggplant Parm

For breakfast we made waffles and ham. I love our waffle maker!

We waited for my brother all morning but then he called and said he was sick so we ended up going home.

We tried a new Italian place. It was really good! I had eggplant parm which I had been craving and Matt got the chicken parm and I tried some and that was the best chicken parm I’ve ever had. The chopped salads it came with were great too, they had fried onions and Gorgonzola. Excited to put something new into the rotation.

We are rewatching Severance and I always think if I did it (which I wouldn’t!) it would be because I’d want to forget work, not my regular life.

Day 1776: Corn Muffins

For lunch we made sandwiches with the leftovers from Thursday.

Matt did a grocery run since it looks like we might get snow Sunday and tomorrow my brother is supposed to visit about some estate stuff. He also warped up one of my floor looms!

For dinner Matt made pork chops, corn muffins and zucchini. It’s nice eating regular food again!

Day 1775: Soft Pretzel

I had my colonoscopy at 6:30 am which is early but since you prep all night it really is ideal. We were back by about 8:45. I had a turkey and capocola sandwich around 9 and then basically went to bed until 3 pm.

Matt checked out a new to us Amish market and picked us up soft pretzels to try. It’s been a long time since I’ve had a hot soft pretzel.

He also got us shrimp salad, picked beets, pasta salad and cucumber salad for dinner. The cucumber salad was almost too cucumber-y; it had a really thick skin on all the slices but the rest was good.

Day 1769: Trout

I made a turkey capicola, lingonberry, provolone melt for lunch. Sort of like a Monte Cristo without the batter.

We tried a fresh stir fry mix from Lidl for dinner. It wasn’t bad! We had bought 2 filets of steelhead trout but one as bad. We have really had a lot of bad luck with food lately no matter where we get it from. Luckily we had enough for dinner but the rest was supposed to be for lunch another day. Matt did a little Costco shop so we just had some bread with it.

Did some button homework. The book isn’t very well written but I think I did okay. It’s such a niche craft you really are at the mercy of these people who don’t always know how to teach anything. I hate it when patterns tell you to make something like X but change it and do YZ instead. Just explain YZ.

It’s like knitting patterns where they spell out row 1-2 and then 3-4 are both “repeat row 2” and then it tells you to repeat rows 1-4 ten times. Surely there is a better way to write that?

Day 1768: Leftovers

Made turkey capicola sandwiches for lunch.

It’s still pretty icy here. They are calling for snow on Saturday so I hope that’s not much. They are being really vague—a dusting or up to 2 inches. We never did get salted or cleared at all.

Matt went to the other house to dig it out and we had leftover pasta for dinner.
