Day 1787: Hots & Tots

Matt went into work so I had soup and some Chex mix for lunch.

It’s finally a little warmer but the dogs still spent the day sleeping!

I made some good progress on one of my blanket squares for January. I’m a bit behind but I’m hopeful I can catch up!

For dinner we had hot dogs and tater tots. Since he doesn’t work in person often those days are kind of long and unpredictable.

Day 1785: Kashk O Bademjan

Our initial plan was to have the leftover chicken parm for dinner but then we realized it wasn’t quite a dinner portion so we had it for lunch instead when we got home.

By the time we did some chores it was too late to make what we had in the fridge (pot roast) so ended up getting Iranian food which we haven’t had in ages. We got some vegetable appetizer platter and my favorite kashk o bademjan, koobideh and loobia polo.

In the “can’t anything be easy” files: I bought an odd used loom from Crafter.com/The Crafter’s Box in early November. They emailed me a week later saying I wouldn’t be getting a used loom but a new one and it would be an extra week or two. Their messages were garbled messes but the obvious reason is that they didn’t put a cap on the used loom orders and over sold before they noticed. I ordered like 10 minutes after the email went out. They basically said this was a good thing because I’d get a brand new loom for the price of a used one. Okay.

Two months have passed and it arrived and it’s broken. How to people run businesses like this?

Day 1784: Enfrijoladas

For lunch we leftover shrimp salad.

We played Hive. The instructions had some sentences missing but we played a different edition before so we figured it out.

Matt had to handle some things back at home re: the plumbing and that took up a lot of the day.

While he was doing that I made the last three buttons I had for homework. One was with beads which was a little tricky.

Someone set off fireworks on the frozen river! That was unexpected. It was pretty close to us but I don’t know who did it.

For dinner we ended up getting takeout; I got enfrijoladas and he got enchiladas.

Day 1782: Chicken Parm

I met my brother at the other house in the morning. That went fine but the rest of the morning was bad, the toilet stopped working as I was leaving so Matt had to deal with that. Neither of us slept and somehow FedEx dropped a package at our house at midnight.

It’s so cold. Normally the high is the low 40s and it’s been in the teens and twenties for a couple weeks.

The river is frozen. The neighbors said they saw some foxes playing on it the other day.

For lunch I went to the Amish market we tried the other day and got shrimp salad and a single serving of cream cheese iced monkey bread. That was really good.

All day was kind of a wreck and we ended up getting food from the new Italian place. We both got the chicken parm this time and tried the house salad. The chopped was better but it was still solid.

Day 1780: Salmon Croquettes

Tried to start a bead weaving project but it went awry. I’m not sure if I have enough thread anymore and I have to start over.

For lunch I had leftover eggplant parm and garlic bread. Matt went into work and it was bitterly cold so he got the halal cart like 5 feet from his office.

Normally the highs for us in January are near 40° so highs in the teens is rough. Not as rough as they’ve had it in NOLA today though! I saw pictures of so much snow.

For dinner we were going to have the cod but Matt decided to make croquettes with the leftover salmon instead. It really isn’t a ton of cod so maybe we will have it for lunch tomorrow?

Also wild rice pilaf with mushrooms and spinach,

And cookies.

I can’t even put into words about the new presidency. My mom would have been so mad. She refused to even say his name the first time around.

Day 1779: Cookies!

Shoveled out today. Not as much snow as they predicted but it’s super cold and icy. I guess it’s global warming but our winters have been so much colder on average and for longer. I don’t like it!

We had the leftover bagels for lunch.

For dinner we made the leftover pork chops and zucchini into quesadillas, added refried beans and spinach.

Then we baked cookies—brown butter chocolate chip. They came out good! We cooled the butter wrapped up in the yard on our table in the snow.

We had some cod with a close date so sautéed that up for tomorrow’s dinner so it doesn’t go bad.
