Day 1829: Bagels

I realized yesterday that we had a ton of smoked salmon from Costco that Matt had bought and we didn’t eat yet. It was expiring in a few days so I froze half (America’s Test Kitchen said it would be fine but I’m skeptical) and drove down to the ok bagel place to get bagels for dinner.

For lunch I had my chaat leftovers.

It’s actually quite nice out! I wore my new Mary Janes to the bagel shop. No jacket! The birds are chirping.

We had bagels with tons of smoked salmon, capers and onions for dinner. And some Cara Cara oranges for health.

Day 1828: Hots & Tots

I had my retina appointment this morning. He thinks that is what is happening and wants me to come back in three weeks to check it again but it might take a few months(!). The light flashing is annoying but a little less today.

I was so dilated I felt woozy. We stopped at the rich people grocery and got sandwiches and split them. They weren’t bad! One was ham and Boursin and the other was turkey, ham and blue cheese.

We were supposed to get chips with them but Matt couldn’t find them and I couldn’t see.

Then we had hots, tots, beans and coleslaw for dinner.

Long day!

Day 1827: Salmon

Waffles for “brunch” since we had leftover buttermilk and some eggs getting old.

Matt did a shop and got a lot of meat and seafood but not a ton of veggies. He also got a plant stand I’m looking forward to putting up! You go, Aldi.

For dinner Matt made salmon with sautéed mushrooms, green beans and baby potatoes.

Day 1826: Chaat

It has been kind of a rough week. The lights in my eye are distracting and Matt has had a lot of work stuff going on and in person.

We got roast beef sandwiches from the Amish place and some monkey bread.

For dinner we ended up getting Indian take out but I wasn’t very hungry and just got a little chaat. I still have some leftover!

Day 1825: Lomo Saltado

I had the quiche from the meal prep place and it was okay but it was marked “powerhouse” which apparently meant it was just egg whites and not their regular quiche. They really should have some ingredients listed and descriptions on their food.

For dinner we tried a new Peruvian place and got lomo saltado. It was good! Better than the last couple places we’ve tried. They are very new so I hope that continues! The beans we got on the side tasted straight from the unseasoned can so we won’t get that again but the other food was good.

I got the second shingles vaccine. My arm hurts so bad! I’m a little leery of driving with the flashing lights so I just went there and straight back. We really need to grocery shop!

Day 1824: Thai

I forgot what I had for lunch. Some leftovers of some sort?

I think I’m getting posterior vitreous detachment in my left eye. I had it in my right eye a couple years back. I’m seeing white flashes here and there. I called the retina doctor and made an appointment for Monday so we will hope all goes well until then.

For dinner Matt went to the meal prep place but they didn’t have much so he just got us brownies and a quiche for my lunch tomorrow and picked up some Thai food. Tried a new app.

Day 1821: Spaghetti and Meatballs

We had leftover Chinese food for lunch.

The plan was to make tacos again with the leftover meat but thought it might be better to have it when Matt has to go into work. So we picked up spaghetti and meatballs after we got home.

I spent the day making buttons. I missed a class when I was at my weaving workshop so I watched the recording and then did the homework buttons. Over five hours of button making. My wrist is tired!

Day 1820: Swedish Meatballs

We picked up salads and rolls at the Amish market yesterday so we could have them for lunch today. I had their shredded chicken salad and we shared some pasta salad.

For dinner we had frozen meatballs, packet sauce and potatoes from IKEA and Matt made us sautéed green beans and mushrooms.

I don’t know if we’ve had them before but they were not bad. Huge portions though! I had picked them up to have at the other house since there isn’t a lot of carry out near by and it’s a pain to haul a ton of food there.
