Day 1491: Mashed Potatoes

I hate when what should be an easy day turns into an unexpected mess.

I was supposed to be on a podcast today and they never sent me the number to call in then when I told them I didn’t get it, they pulled the “I’m sorry for your confusion” nonsense. I’m not confused, you didn’t send me the information I needed to do you a favor and be on your podcast!

Then I had hours of back and forth with the scheduling office for Hopkins about why I do I need to schedule a physical with a gyn to get a refill of my birth control pills when I had a physical with my primary less than a month ago and she agreed I should keep taking them. They keep saying in case something has changed but it has been 25 days. Nothing has changed. Now I don’t know if they are doing the refill or not? They did for 3 months to give me time to make an appointment but I don’t want another physical. I don’t even think our insurance would pay for it,

Then I had to do something with the MVA for my dad, the traffic lights were out when I tried to go to the library and the cod wasn’t defrosted.

We ended up getting Chap’s sandwiches and my pit beef was dry and small but at least the mashed potatoes with spinach I made during our last dinner disaster and reheated were good?

I’m just exhausted and also stressed about my class Thursday. I had dreams about weaving it over and over again,

Day 1490: Various Leftovers

Ran some errands in the morning and then we had our leftover Chinese food for lunch.

I practiced my weaving for class on Thursday but I don’t like how she describes what she’s doing and wasn’t getting the hang of it. I think she is talking about what she is doing after she does it and not as she does it which is confusing. I had Matt watch and try it out and I think we got the hang of it. I find her word choices odd too—like she uses “twist” when I’d use “swap”. It got late so I’ll have to try it tomorrow.

For dinner I had the leftover keema spaghetti and Matt had leftover chicken and made rice and zucchini.

Day 1488: Take out

We did not make it to the museum! The wind was too much. We ended up getting sushi for lunch.

The plan for dinner was ham, mashed potatoes and spinach but we made the potatoes and spinach and went to heat up the ham and it was spoiled. Since we are near grocery zero we didn’t have a lot options so we pivoted and got some Chinese food. Which we did not feel like but at least it wasn’t frozen!

So we sort of meal prepped because I think I will turn the potatoes and spinach into a pie.

Day 1487: Keema Spaghetti

Didn’t feel amazing but managed to return some boots at the mall. The employee was helpful and tried to find them in another size but there weren’t any.

For lunch we had the leftover pancit and then for dinner Matt made us keema spaghetti from the ground beef I had defrosted.

Tomorrow our goal is a museum visit but the weather is so chilly and windy and it unexpectedly rained today we might not. It’s about an hour away on the water so windy and cold wouldn’t be much fun.

Day 1486: Lasagna

For lunch I had a grilled cheese.

My class today was a mess. It’s online and there were a ton of technical difficulties. I learning nothing. I’ll try and teach myself before our next class but if it is bad again, I’m just going to quit. It was not fun at all and I’m only doing this to learn something new for fun! I’m not interested in being stressed about it.

I got a horrible migraine in the evening and Matt ended up getting us the lasagna special after he got back from work. Maybe I won’t have to grocery shop tomorrow after all? We have ham and the ground beef should be defrosted by then and plenty of vegetables. I guess I’ll see how I feel in the morning.

Day 1485: Lumpia

Did not go to the store because it was thundering and lightening out.

Had soup for lunch and then Matt worked late and we ended up getting Filipino food for dinner. Our favorite place was closed for a long break so it was good to lumpia again. And pancit bihon.

Tomorrow I have class so maybe Friday I’ll make it to the store? We do have some food here defrosting and the leftover ham but we were a little beat today. I did so much cleaning and organizing today! I had so much skin care bottles just a smidge left that I needed to let go.

Day 1484: Ham

Not the most exciting or healthy meals today! I had the last of the hot dogs for lunch and some popcorn and then we had (spiral) ham sandwiches, the rest of the deviled eggs and steamed broccoli for dinner.

My goal was to go grocery shopping tomorrow but we aren’t in too bad of shape and it’s supposed be horrible weather again so I might try and put it off. I defrosted some ground beef, we have a good amount of vegetables and a bunch of ham leftover.

Day 1483: Coconut Cake

Dreary, chilly day! I taught myself a new crochet stitch for my cowl project.

For lunch we got the sushi lunch special and then for dinner we had broccoli, and leftover crab cakes, potato salad and deviled eggs.

And of course lamb cake. I love how they make coconut grass and have little jelly beans around the cake. Super cute!

We are trying to buy a new grill and Home Depot said we could pick the delivery date but when we check out, it assigns us to one. Not sure how to work around that. Customer service seemed perplexed that we’d want to pick a day and time for this grill to arrive.
