Day 1502: Salted Egg Yolk Shrimp

We had a turkey sandwich and then drove across town and took a sock knitting class. We almost made an entire tiny sock! It is a fun idea for a class because most sock classes take place over several weeks and that’s a lot of time commitment. I swear a saw a tiny sock class offered somewhere over the winter (maybe making a tiny stocking?) and assumed it was this one but the instructor said it wasn’t.

Then we got home and I fixed the problem with the grill assembly and thought we’d have it up and running tomorrow but when I flipped it over, one of the pieces that comes attached to the kettle part is missing! I don’t know if is something they can send us to attach ourselves or what? We really can’t lift it fit the grill in our car to return it so we are hoping the warrantee will cover it.

We were exhausted so got takeout from the fancier Szechuan place a little further away. Lots of leftovers except the salted egg yolk shrimp which we finished right away. So good!

Day 1500: Lasagna

Today was a mess! Our grill was supposed to be delivered but didn’t even make it on the truck. I did get to the daffodil show but when I came back, our power was out. I had another circular conversation about physicals at the doctors office that may or may not have gotten anywhere.

I had made trout salad for lunch but we didn’t want to open the fridge since we didn’t have power. We ended up having soup because we were able to light the stove.

We were worn out by the end of the day and ended up getting the lasagna special with salad and calling it a day.

At least the daffodils were pretty!

Hopefully the drill will arrive tomorrow? We have a class paid for Saturday we don’t want to miss but the grill can’t just be left on the lawn for hours.

Day 1499: Trout

Did an Aldi shop and it unexpectedly rained and thundered! Luckily I didn’t need too much; we already had a lot of vegetables. I did get two of the girls new beds.

I got a take and bake pizza for our lunch and then for dinner I made steelhead trout and the leftover risotto. I made double trout and made some trout salad for tomorrow’s lunch.

I finished my succulent crochet kit! It came out super cute if slightly large because I don’t know how to count.

We ordered a new grill and it’s supposed to be delivered tomorrow but it hasn’t shipped so we will see! We have a class Saturday and won’t be home so it better be here before then! It’s stressing us out! They had said it would be store delivery but now they said it would be UPS or FedEx and it’s heavy and expensive so obviously we have to be here when it arrives!

Day 1496: Chicken

We went to the tulip garden today! It was fairly early but very busy. A little disappointing because a lot of people set up in front of the flowers instead of in the massive open spaces and they didn’t seem to plant some of the fancier varieties this year. Lovely weather though!

For lunch we ended up getting burgers and then for dinner we had leftover chicken and some spinach rice pilaf. The plan was risotto but Matt ended up mowing the rest of the lawn and it got late.

I hope tomorrow will be nice too! I miss sunny warm days.

Day 1495: Gummy Bears

Matt came back from visiting his parents today and picked up some sandwiches on his way.

It was very windy (cold wind!) but Matt was able to do some mowing and we grilled chicken and I roasted some zucchini and baby potatoes.

I had ordered some of the new True to Fruit Albanese gummy bears and we did a little taste test. 10 flavors that really were pretty true to life. The honeycrisp apple and strawberry were a little disappointing, unexpectedly! I think the appeal of the honeycrisp is the texture and the sweetness and this was just sort of sweet and flat. The mandarin orange was really good and the banana (although I don’t love banana) did taste like a real 2024 banana! The colors were really close between the flavors, I had to use a flashlight!

Day 1494: Nachos

For lunch I just had a can of soup. Did some knitting! It was an oddly rainy yet sunny day. At least the dogs got outside to play a bit. I think we lost power at some point because the stove was blinking.

For dinner I made nachos with refried beans and finished off the salsa and sour cream! I got a small grocery delivery today (mostly produce) but the fridge is looking bare! I’m trying to squeak by until next week for a big grocery shop.

Day 1493: Leftovers

I stopped at the Italian market this morning and got cheese and a sandwich.

For dinner there was leftover Chinese food. The eggplant really reheats well.

I warped up my band loom and man, I do wish I had one of the fancier ones I tried in class. It’s fine and wasn’t cheap but I don’t love the layout.
