Day 1422: Potatoes and Green Beans

I didn’t hear from my father today so I’m assuming he’s feeling well. Last night was a mess.

I went to Aldi and did a big shop. Lots of vegetables and big cuts of meat. It was $170 but less than expected, honestly! I also got a stainless steel French press since we have not had good luck with the glass ones.

I’m happy it’s February tomorrow! Small steps toward spring and setting the clocks forward.

I finished my knitted bag and started the Sophie Scarf with yarn leftover from two small projects from the book. I weighed it and think it’s enough. I guess I will weigh it again when I am about halfway through the ball.

I got a take and bake pizza for our lunch. I really didn’t feel like pizza but I wasn’t sure what else to have.

For dinner I made coho salmon and potatoes and green beans boiled in lemon and herb water. It was tasty and I have a lot of potatoes and green beans left for another meal. I had bought the potatoes the last time I did a big shop and I’m amazed they were still perfect after so many weeks! I have not had great potato luck lately.

Day 1421: Mac & Cheese

Dramatic aging parent day from both sides. Everyone seems okay now but very stressful.

Lunch was leftover kimchi rice and a popcorn snack.

Dinner was another toddler meal of leftover smoked mac and cheese, leftover sloppy joes and roasted Brussels sprouts.

I’m going to the store tomorrow! We are scraping the bottom of the fridge which was my goal. This week’s sale looks better than the last so it feels like time.

Thinking about knitting the famous Sophie scarf, I have a lot of scrap yarn from the book projects and it looks like a good next step project. I finished knitting the bag today and practiced on my inkle loom. I want to weave the straps for it rather than buying webbing or tape. My inkle weaving is a little wobbly! But making the straps would be a good project because it’s just for me and doesn’t have to be perfect.

Day 1420: Chicken Rice

I had a appointment this morning and Matt didn’t feel like the leftover fried rice for lunch so I ended up going to this halal chicken place that was open super early and got us chicken over rice with all the sauces. They went a little wild! There is salad in there too. Not eating the leftover kimchi rice solves my lunch problem for tomorrow.

For dinner we just had the leftover pizza. We watched the latest True Detective. Is it going to be something supernatural?

We are both kind of exhausted today! I’ve been counting down to bedtime. Matt has a piano lesson late and I think we will go to bed after that. Even the dogs are trying to get me to go upstairs and go to sleep.

Day 1419: Ribs

Another dreary day! At least it’s almost February and the days are staying light later.

For lunch we had the ribs we got yesterday and Matt made some corn muffins. More tangerine.

Matt had to work today too but we got lot of house stuff done.

For dinner we finished off the kimchi in some rice with spam and shrimp.

I have an appointment in the morning so the leftovers will probably be lunch so I don’t have to come home and make anything. I’m tempted to keep it for another dinner but we do have leftover pizza and sloppy joes. I want all leftovers gone before I grocery shop again!

Day 1418: Pit Turkey

Eating like kids continued today. It was a rough morning! I didn’t get to bed until after 2, fell asleep around 3 and Matt was up working until around 5 am. Dottie woke us up at 6 and I put her out and never really got back to sleep.

Matt had some work to do then ended up running an errand and picking up lunch from our favorite pit beef place. We actually got pit turkey and smoked mac and cheese and some ribs for later.

Then we napped and made zucchini, sloppy joes and chips for dinner. And a tangerine for health. It was okay, a little sweeter than I prefer.

Day 1416: Cupcakes

This morning I drove out in the fog to get some supplies to make bands/tape from a woman on Facebook Marketplace. She was a little odd and particular about her address and wanting to know exactly when I was leaving my house and then made a big deal about leaving it outside with a cash box only to fling open the door to chat when I was trying to leave. She also was messaging me questions and photos when she knew I was driving to her. A little weird!

I stopped at our favorite cupcake bakery on my way back and got us some of their restaurant week specials. I had a hot chocolate cupcake!

I had leftover Chinese food for lunch (again, this time the leftovers from my actual meal) then got a migraine and took a nap. The dogs are always so sleepy when it’s foggy and rainy out so they were happy to nap too and let me sleep.

For dinner we had leftover chicken risotto heated in a skillet like a giant pancake.

I was debating about going to the grocery store tomorrow but I think I’m going to try and stretch what we have longer. We still have a good bit of produce left from my shop two weeks ago and seafood in the freezer. Matt had done a little shop Sunday and we have ground beef from that.

I’m really trying to get to the bare bones before shopping when I can and there is nothing I particularly want on sale anywhere.

Day 1415: Risotto

Today was kind of blah. Nothing pressing to do and it was rainy.

For lunch I had leftover Chinese food (well, a dish purposely bought for lunches from when we got takeout a couple days ago) and Matt went and got a burger to replace the one that met a tragic demise yesterday.

We realized we had a lot more chicken leftover than we realized so Matt decided to make risotto with it and we will probably have it again tomorrow since we need to eat the chicken by then and we had leftovers of the leftover dish. We also heated up the leftover green beans.

It was kind of a chicken pot pie inspired risotto. Ugly but tasty!

Yesterday was so much more productive but then I got a migraine which always makes me kind of spacey the next day.

Day 1414: Rueben

Got up super early today since Matt had to go to work early and tried to sneak out but Dottie woke up and cried.

Had the chili I defrosted with some tortilla chips and pickled jalapeños.

Then I warped up my new loom and did a bunch of cleaning and reorganizing. I think I overdid it a little, I’m a little sore in my stomach area when I’m bending over! I really need a taller table to work with, the coffee table is too low. It’s a strange movement to repeat again and again.

It’s just a scarf using the yarn it came with but the yarn was really splitty and I had to start over a few times. I’m not sure if there is enough for the weft so I will have to figure that out.

It was a long day for both of us so Matt made us coleslaw and then picked me up a Reuben and himself a burger but disaster struck when his burger fell on the floor. He ended up eating the Chinese food we got for tomorrow’s lunch instead.

Had a migraine in the evening which isn’t pleasant! Hopefully tomorrow will be more chill.

Day 1413: Egg Salad

No snow today but still really cold! It’s supposed to be in the sixties at the end of the week!

Did some work and made myself egg salad with eggs we made in our new hard boiled egg maker last night. They peeled really nicely. They have you poke a hole in them, maybe that’s the trick? It seemed like kind of a silly purchase but it also did nice poached eggs last week.

Anyway, I used homemade bread and a layer of everything bagel smoked salmon from Lidl for my sandwich and it was really good even though I made a very basic egg salad because I didn’t feel like chopping much.

For dinner we got Chinese food take out. It was nice not to cook! And we got extra so we won’t have to worry about lunch Wednesday or for me on Thursday. I defrosted some chili for tomorrow.

I started the next Karen Pirie audiobook. What is it with the fatphobia in books written by UK women of a certain age? There was a ton in the Ann Cleeves books. It’s a pretty solid series though and only the first one is available in my of the libraries so I was happy to see the rest in Hoopla.
