Day 1331: Leftovers & Takeout

I made sort of nachos with the sloppy joes and Swiss chard leftovers, onions, cheese and habanero salsa. I bet I’m the only person who has attempted that! They actually were pretty good!

For dinner the plan was tofu soba noodles but the tofu was expired so we had to get take out because we didn’t have anything else and just veggies and noodles didn’t seem very filling. At least we have leftovers so I won’t have to worry about lunch.

My goal tomorrow is Costco to get stuff for fake Thanksgiving and hopefully some of their meal kits for the next couple of nights. I really don’t want to get back there until after Christmas. I feel like I always say I’m taking a Costco break but we’ve had to do some returns lately which has really added to the Costco runs. It’s so feral near Thanksgiving and Christmas! I figure it is early enough to have fewer people but close enough to have some winter/holiday stuff.

I’m a little worried about the turkey defrosting. It still seems pretty solid. We really planned everything around making it Saturday so it needs to be ready then.

Spent the afternoon archiving cookbooks. Some interesting menus.
