Day 1228: Samosa Chaat

I’ve had a migraine twice in the last two days and I’m flagging.

I did manage to make a apple crumble cake for my dad’s birthday get together tomorrow but I’m no sure if I’m going to be up to going.

It seemed wrong to make an apple spice cake in July but it’s what he wanted!

We had the leftover pancit for lunch then got take out way out in the suburbs for dinner. Low energy and bad luck grocery stopping will do that. I had baingan bharta and we split some samosa chaat and chili chicken. I have so much leftover! Matt had some biriani and it was oddly spicy but the chaat was so good! We had never tried their chickpeas before.

Day 1227: Ube Pandesal

Went to Aldi this morning and had mixed results. No coconut and not a ton of meat or fish that I’d want. I overheard the cashier say they didn’t get a full truck yesterday so that was probably it. Still frustrating because I my goal was to really get us through next week without having to do more than stop at the farm stand.

For lunch I made us leftover meatloaf sandwiches.

For dinner I made pork chops with shishito peppers, zucchini and onions and Matt made a wild rice packet.

For dessert we heated up the ube pandesal we bought yesterday. It was so good!

Day 1226: Ensaymada

Long day! Matt took my dad to a doctor’s appointment then we had some canned soup for lunch. Medical stuff is exhausting! I had to review it all with my dad again for like an hour on the phone and make an plan for later.

Did some spinning and work on recipes.

I was going to have the leftover pork and make some soba noodles for dinner but I realized there wasn’t enough pork for both of us. Instead we got some pancit bihon, lumpia and split some ube ensaymada and buko pandan. We were so hungry! A can of soup was not enough lunch.

Day 1224: Mushrooms

I went to the library to pick up my books and there was no parking for blocks and blocks so I gave up.

For lunch we had leftover shrimp salad on brioche rolls with some chips.

I tried out the spinning wheel I got on eBay and I don’t like it! I really want the one that was on the listing. I filed a complaint with PayPal so we will see.

Worked on the cookbook project.

For dinner I was going to make marinated mushrooms, roasted potatoes, zucchini and pork. The mushrooms didn’t all look great and the potatoes were moldy! I ended up roasting the pork, the mushrooms that were okay and the zucchini. For dessert we had some ice cream.

I’m trying to stretch out the groceries until Thursday so it will be interesting to see what I figure out for tomorrow and Wednesday. I have some ground beef and some odds and ends in the freezer. I don’t want to shop too soon because I have some appointments next week and won’t be able to go shopping. I want to get the furthest out expiration dates possible.

Things are finally starting to be in season here so I’m hoping to get to a produce stand this week!

Watched Meurtres Sur Les Iles Du Frioul. It was an odd one.

Day 1223: Grilled Chicken

We had a lot of food today since yesterday was basically nothing.

I actually ate breakfast (low fat frozen sausage and hominy) and lunch (grilled cheese, popcorn) and dinner (grilled chicken thigh, leftover sides from yesterday).

Honestly didn’t do a ton. I didn’t feel great so I attended my weaving meeting via Zoom. I did the final paperwork for the grant project. Worked on Cooking in Community for a few hours. I almost have August fully scheduled.

We finished the new season of Grantchester.

I am trying to think about what to do for the week we are off in August and my birthday! Its only a month away!

Day 1222: What Dinner?

Today we went to an event at Winterthur, about 60 miles away, that ended up with us spending unexpected hours in the car.

It was also brutally hot and humid and there was virtually no food there. Matt got a snack when we arrived but the grounds were huge and we never found more food or got back to where we started.

We ended up getting some cold take out—shrimp salad and some other cold salads when we were nearly home very late in the afternoon.

Still not hungry for dinner and honestly don’t feel very well. It was a long, challenging day!

Day 1221: Nougat ?

Ran to Target early than had leftover Chinese takeout for lunch.

Spinning, weaving then I I made this knackwurst sheet pan dinner but with different spices. It has been a sausage and potato week but honestly that’s all I have the energy for. Dottie keeps getting us up at literal daybreak and I am having trouble falling asleep.

We blocked off the light around the air conditioner in the window but that did not deter her. We have blackout shades but you can still see faint light around the edges.

Anyway! Exhausted. Started the next project in the knitting book and had some Lidl candy. A nougat assortment but they are really more like brittle.

Day 1220: Salmon “Burgers”

Grocery shopping day! I got everything and then got home and Matt told me the dogs need more chicken breast. Oy!

Went to the Italian store to get ingredients for dinner so had sandwiches for lunch.

For dinner I made salmon burgers from one of the vintage cookbooks and served them with bread from the Italian store and the rest of the tomatoes from yesterday. It was pretty tasty!

I did get the spinning wheel I won two weeks ago on eBay and it’s a different model than the listing said. I told them and they said it’s not their problem because I saw the pictures. But you can’t tell the the size/scale from the pictures and that’s the diffence between the two. They stopped making this model about a decade ago. I’m not sure what to do.

It’s in great shape but it’s smaller than I wanted and the replacement parts are harder to find because the newer model has been out for so long. They also keep saying something incoherent about how expensive it is to ship and their profile says no returns. I’ve never had this issue before! It seems reasonable to expect the listing to list the correct model. They keep telling me they had no way of knowing which model it was but they obviously could since it’s a difference size and they had it in their possession.

Day 1219: Tomatoes

Did some work and spinning! Had some canned tomato soup with some cheddar swirled in for lunch.

I made a tomato salad recipe from a community cookbook as a side for dinner but then the main I was planning on was freezer burnt so we ended up getting Chinese takeout and I had a tomato salad snack.

Tomorrow is grocery shopping so hopefully I’ll get some good stuff! We are pretty bare bones in the fridge and freezer. Nothing is leaping out at me from the sale ads though.
