Day 1077: Chili

Today for lunch Matt made us turkey, capicola and provolone sandwiches with olive spread.

It was freakishly warm (75°!) so I spent a few hours cutting up some of our old clothes to make rugs with in the future. It’s too dusty to cut them up inside so it was great to have a warm day in the winter to get some done. The cut up pieces take up so much less space than the clothes which is a major bonus!

I had to take some migraine medicine but I pushed though. I’m so tired of headaches!

I harvested some crocuses and snow drops (really early for them) and pressed them in the flower press Matt got me for Valentine’s Day. I’ve never pressed flowers before!

Next thing I knew it was time to leave to go to our second (and final) knitting class. They never got back to us about how far to knit so we had to do some fast knitting to get the point where we could use the double pointed needles. We had stopped at the first decrease at home but we kept going until the opening was smaller before we switched to the needles. Oddly the other people had finished their hats? I’m not sure why. The instructor did bring some sample balls to try the double pointed needles but we just worked with them on our hats. Mine turned out pretty cute despite my somewhat lackadaisical approach to counting.

We browned some ground beef with some peppers yesterday and I put it and some spices, beans and tomatoes in the slow cooker around 1pm for our dinner. I have come to realize that we kind of like super simple chili in the slow cooker best; I used to spend a lot of time chopping peppers and onions and it ended up making it too watery or diluting the flavor. One day I made it with just spices (including dehydrated onion, garlic etc) because I didn’t feel great and Matt raved over it. Why put all that effort in then? It’s still tasty! My “trick” is to put in one can fire roasted tomato and one can Ro-tel, chili starter tomatoes or Hunts jalapeño and habanero tomatoes. This time I did Ro-tel and added chili starter because it looked a little dry when we went to leave for our class.

We didn’t get back until after 8 and I was so hungry! The class location was cute but pretty much was the exact opposite direction from where we live and past the city line.

I have never been so happy to eat chili! We topped it with avocado, red onions, cheddar and sour cream and I scooped mine with tortilla chips. We have enough for another dinner left—probably Sunday when I have my weaving guild meeting.

Matt was supposed to make rice for tomorrow’s dinner but forgot until we got home and it was too late. Hopefully he will remember to do it tomorrow morning while I’m out!

We came home to a big box of yarn for our next project, ate dinner and watched Will Trent on Hulu and Selena + Chef on HBO Max but it was a stressful one with Nancy Silverton where everything went wrong and it was not as soothing as we would have liked. I finished my hat at the class but Matt finished it during Selena.
